John Kennedy/Blues Sticky Toffee Pudding

150g   Vanilla sugar, 225g   Butter.25g Baking powder

150g    Dates ,225ml Water ,190g   Cream flour

100g    Broken Walnuts

Put the Dates in cold water and bring to the boil , simmer 5 mins and leave to cool. Beat the butter and sugar together. Add the baking powder to the dates and add this to the butter and sugar. Sieve and fold in the Flour add the Walnut. Pour in a 10” spring form tin / mould. Bake at 150c for 50 mins

To make Toffee Sauce

30Og Soft Brown Sugar ,450ml Cream,50g   Butter

1 large brandy ,Few drops lemon juice

Put all the ingredients in pot together bring to boil and simmer for 5 mins .Pour over Pudding.

NB Can Leave to Cool and reheat in microwave
